Brinjal Vindalu



Vazhuthananga – 500 grm
Onion  – 3
Tomato  – 4
Chilly Powder – 1 tsp
Turmeric Powder – ¼ tsp
Garlic  – 2
Fenugreek  – ¼ tsp
Cumin Seed – ¼ tsp
Coconut Oil – 1 desertspoon
Salt  – As required
Vinegar  – 1 tsp

Wash the Brinjal and cut it into small pieces.  Add salt and turmeric powder, mix well and keep aside.

In a kadai heat coconut oil, add the brinjals and sauté till it becomes reddish.

Grind chilly powder, cumin seed and fenugreek.

Slice tomatoes in cubes.  Chop onions to small pieces. Heat oil in a pan, sauté onion and tomatoes.  Add vinegar, salt, grinded masala and Brinjals, sauté well.  Add enough water and cook until done.
