Crab Curry


INGREDIENTS:-

6 medium sized crabs

4 tbsp oil

TO GRIND:-

1 big onion

½ pod garlic

1 piece ginger

2 tomatoes

7 green chillies

¾ cup grated coconut

1 tsp aniseed

1 tsp poppyseeds

10 blanched almonds

TO POWDER:-

6 black peppr corns

3 cloves

1 piece cinnamon

3 cardamom

½ tsp cumminseed

1 tsp chilli powder

1 tsp corianderpowder

½ tsp turmeric powder

TEMPERING:-

1 piece cinnamon

3 cardamom

10 curry leaves

Salt to taste

GARNISH:-

½ cup chopped coriander leaves

6 lemon wedges

 

METHOD:-

  1. Break open the large crab shells and discard the fibrous tissue which might be adhering to the shell.pound the claws if they are large,breaking them into convenient sizes to eat.leave the cloves as they are if they are smaller.
  2. Heat a tbsp of oil,and the saute onion,garlic,ginger,tomato and chillies till the onions are translucent.
  3. Dry roast the grated coconut,aniseed,poppyseeds,almonds,and grind them with the fried ingredients to a fine paste.
  4. Heat the remaining oil in a heavy bottomed pan,and temper with cinnamon.Cardamom and curry leaves.Add the ground paste,the spice powders (8 ingredients) and stir fry for 2 or 3 minutes.Add the crab meat and claws and mix well,stirning the curry over heat till oil rises to the surface.Add 1 cup of water and salt to taste,and simmer untill the crab is cooked.
  5. Serve hot and garnish with chopped coriander leaves and lemon wedges, over hot rice.
